The Traditional Tudings Pork Chop Recipe

Tudings Pork Chop is a popular dish from Pampanga, Philippines. Here is a recipe for making Tudings Pork Chop:

Ingredients:

  • 4 pork chops (about 1/2-inch thick)
  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1/4 cup pineapple juice
  • 2 cloves of minced garlic
  • 1/2 tsp ground black pepper
  • 2 tbsp cornstarch
  • 1/4 cup all-purpose flour
  • 2 tbsp vegetable oil
  • 1 cup pineapple chunks (optional)

Instructions:

  1. In a mixing bowl, combine the soy sauce, brown sugar, pineapple juice, minced garlic, and ground black pepper. Mix well to combine.

  2. Place the pork chops in a large resealable bag and pour the marinade over the pork chops. Seal the bag and toss to evenly coat the pork chops. Marinate for at least 2 hours or overnight in the refrigerator.

  3. In a shallow dish, combine the cornstarch and all-purpose flour. Dredge the pork chops in the flour mixture, shaking off any excess.

  4. Heat the oil in a large skillet over medium-high heat. Add the pork chops and cook for about 3-4 minutes per side, or until golden brown and cooked through.

  5. Once the pork chops are cooked, remove them from the skillet and set aside on a plate. Add the pineapple chunks to the skillet and sauté for 1-2 minutes.

  6. To serve, place the pork chops on a plate, and top them with the sautéed pineapple. Serve it with steamed rice and enjoy.

Tudings Pork Chop is a sweet and savory dish that is perfect for a comforting home-cooked meal. The pineapple juice and brown sugar in the marinade give the pork chops a nice sweetness that is balanced out by the salty soy sauce and the savory garlic. This dish will surely be a hit with your family. Note: The Laguna version does not have pineapple flavor in it, and no sauce.
